
I wanted to make something green for St. Patrick’s day using simple ingredients I already had on hand. Of course, my mind instantly went for matcha! It didn’t take long for me to throw this together (literally less than 10 minutes) and it is so tasty!
NEED IT:
- 1 cup plain, whole milk yogurt
- 3 Tablespoons date syrup (honey or maple syrup is fine)
- 1 scoop Vital Protein’s Matcha Collagen (or 1/2 tsp plain matcha)
- 3-4 walnuts, chopped
- 1 Emmy’s Matcha Cookie, crumbled
MIX IT:
Line a baking sheet with parchment paper and set aside. In a small bowl combine yogurt and date syrup; whisk until evenly combined. Pour yogurt mixture on the lined baking sheet, carefully spreading it out until an even thickness is reached.
TOP IT:
Crumble the matcha cookie with your hands and sprinkle on top of the yogurt. Garnish with walnut pieces.
FREEZE IT:
Place in the freezer for 3-4 hours. Break apart into pieces and serve. Store in an airtight container in the freezer for up to 2 weeks.
