

When it comes to mouth-watering flavor combos I am always team peanut butter + chocolate. Don’t get me wrong, these cookies without the chocolate drizzle are equally as delicious, but the chocolate just gives it extra oomph if you know what I mean. The ingredients for these cookies are pretty straight forward and minimal. Feel free to sub the maple syrup and coconut sugar with your sweetener of choice, and don’t forget to use peanut butter that only contains one ingredient (no additional sweeteners or oils).
GRAB IT:
- 2 cups Bob’s Red Mill spelt flour
- 1/3 cup Fourth and Heart ghee, melted
- 1 tsp vanilla extract
- 1 cup creamy peanut butter
- 1 tsp Bob’s Red Mill baking soda
- 1/2 cup pure maple syrup
- 1/4 cup coconut sugar
- 1/2 bag Enjoy Life Foods chocolate morsels
- 2 TBSP Nutiva coconut oil
- Pinch of sea salt
mix it:
Preheat oven to 350 and line a baking sheet with parchment paper.
In a large bowl, combine flour, baking soda, and coconut sugar. Stir in melted ghee, vanilla, peanut butter, and syrup and mix until fully combined. Using a cookie scoop or your hands, form small balls of dough and mash with a fork. Bake for 15 minutes.
In a small saucepan, add chocolate morsels and coconut oil and heat on low until chocolate is fully melted. Stir often to prevent burning. Once cookies are fully cooled, drizzle with chocolate and sprinkle a little sea salt on top.
